- 1 c. yellow cornmeal
- 1/3 c. all-purpose flour
- 2 Tbsp. sugar
- 1 tsp. salt
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 2 beaten eggs
- 1 c. buttermilk
- 1/2 c. vegetable oil
- 1 (8 3/4 oz.) can creamed corn
- 1/3 c. chopped onion
- 2 Tbsp. chopped green pepper
- 1/2 c. shredded Cheddar cheese
Directions

1In bowl, combine first 6 ingredients.

2Combine remaining ingredients and add to dry ingredients.

3Stir only until moistened.

4Pour into greased 9-inch square baking dish or 10-inch heavy skillet.

5Bake at 350° for 30 to 35 minutes or until golden brown and tests done.
