  • 1 1/2 c. cornmeal (self-rising)
  • 1 (No. 2) can cream-style corn
  • 2 eggs
  • 1 tsp. garlic salt
  • 1 clove chopped fine garlic
  • 2 Tbsp. chopped bell pepper
  • 3 jalapeno peppers, chopped fine
  • 1 small can pimento (optional)
  • 1 c. sour cream
  • 1/2 c. cooking oil
  • 1 1/2 ??? sharp Cheddar cheese (block cheese)

Directions

    Mix all ingredients, adding eggs, cornmeal and cheese last. Bake in 425° oven for 40 to 45 minutes or until done.

    Makes approximately 18 muffins (grease well) or can be cooked in large iron skillet.
