- 1 1/2 c. cornmeal (self-rising)
- 1 (No. 2) can cream-style corn
- 2 eggs
- 1 tsp. garlic salt
- 1 clove chopped fine garlic
- 2 Tbsp. chopped bell pepper
- 3 jalapeno peppers, chopped fine
- 1 small can pimento (optional)
- 1 c. sour cream
- 1/2 c. cooking oil
- 1 1/2 ??? sharp Cheddar cheese (block cheese)
Directions

1Mix all ingredients, adding eggs, cornmeal and cheese last. Bake in 425° oven for 40 to 45 minutes or until done.

2Makes approximately 18 muffins (grease well) or can be cooked in large iron skillet.
