  • 1 c. yellow cornmeal
  • 1/2 tsp. soda
  • 1/2 tsp. salt
  • 3/4 c. buttermilk
  • 2 eggs, beaten
  • 1 c. creamed corn
  • 1/3 c. bacon grease
  • 1 c. whole green chilies
  • 1 c. grated Cheddar cheese
  • 1 c. grated Monterey Jack cheese

Directions

    Mix first 7 ingredients together.

    Spread 1/2 mixture into a greased 8 x 11-inch casserole dish. Layer chilies evenly over mixture and sprinkle both cheeses over chilies.

    Cover with other half of mixture.

    Bake, uncovered, at 400° for 30 to 35 minutes. This recipe may be doubled.
