- 1 c. yellow cornmeal
- 2 eggs
- 1 c. milk
- 3/4 tsp. salt
- 1/2 tsp. baking soda
- 1 can cream-style corn
- 1/2 c. bacon drippings
- 1/2 lb. ground round
- 1 onion, chopped
- 1/2 lb. grated rat cheese or Cheddar
- 4 jalapeno peppers, chopped
Directions

1Brown ground meat.

2Grease and heat large skillet.

3Sprinkle very thin layer of cornmeal in skillet and let brown slightly. Pour 1/2 the batter in skillet.

4Sprinkle cheese evenly over batter, then the meat, onion and peppers.

5Pour remaining batter on top.

6Bake 45 to 50 minutes at 350° or until brown.
