  • 1 1/2 c. self-rising cornmeal
  • 3 eggs, beaten
  • 1/3 c. vegetable oil
  • 1 c. (or more) cream-style corn
  • jalapeno peppers (to taste)
  • onion and green pepper (if desired)
  • 1 c. grated Cheddar cheese
