Mexican Cornbread

- 1 c. corn meal
- 2 eggs, beaten
- 1 c. sweet milk
- 1 can yellow cream style corn
- 1/4 to 1/2 c. bacon drippings
- 1/2 lb. ground chuck
- 1 large onion
- 8 oz. sharp cheddar cheese, grated
- 2 jalapeno peppers, finely chopped
Directions

1Brown ground chuck and onion together and drain.

2Mix corn meal, eggs, sweet milk, and corn.

3Grease 12-inch cast iron skillet with bacon drippings and heat in 350° oven until hot.

4Pour hot grease into corn bread mixture, then pour 1/2 of batter in skillet. Sprinkle browned beef and onion and grated cheese evenly over batter in skillet.

5Pour rest of batter over the meat and cheese. Bake for 50 minutes.

6(Good with green salad or pinto beans.)
