  • 3 c. self-rising cornmeal
  • 1 2/3 c. milk
  • 3 tsp. sugar
  • 3 eggs
  • 1 onion, chopped
  • 1 can creamed corn
  • 1/4 c. vegetable oil
  • 7 pods mildly hot peppers, chopped
  • 1 1/2 c. shredded Cheddar cheese

Directions

    Mix together milk, eggs, sugar and oil.

    Slowly add cornmeal. Blend thoroughly.

    Add onion, corn, peppers and cheese.

    Bake in 9 x 13-inch greased cake pan at 425° for 30 minutes (or until golden brown).
