  • 1 1/2 c. self-rising meal
  • 3 eggs, well beaten
  • 8 oz. cream-style corn
  • 1/2 c. cooking oil
  • 2 large pods hot green peppers, chopped
  • 1 large sweet pepper, chopped
  • 1 large onion, chopped
  • 1 c. grated Colby cheese or Cheddar cheese

Directions

    Mix all ingredients together, except cheese.

    Pour 1/2 of batter into a well-greased and floured skillet.

    Sprinkle in cheese (make sure none of the cheese touches the edge of the pan), then pour in rest of batter.

    Cook at 375° until golden brown, 45 to 50 minutes.
