  • 1 1/2 c. corn meal
  • 1/2 c. corn oil
  • 1 c. whole kernel corn
  • 3 eggs
  • 1 c. buttermilk
  • 1 large bell pepper (chopped)
  • 1 large onion (chopped)
  • 3 pods chopped jalapenos
  • 1 c. grated cheese
  • 1 c. chopped hot sausage (cooked)

Directions

    Mix all ingredients except cheese and sausage.

    Pour half of mixture into hot, greased 10-inch skillet, then layer meat and cheese. Top off with remaining mixture.

    Bake at 350° until golden brown, about 1 hour.
