- 1 c. flour
- 1 c. cornmeal
- 1 can creamed corn
- 1 c. buttermilk
- 1/4 tsp. baking soda
- 1 tsp. salt
- 2 chopped green onions
- 2 chopped jalapeno peppers
- 1 c. grated Cheddar cheese
- 2 eggs, beaten
- 1 Tbsp. sugar
- 2 Tbsp. chopped bell peppers
- 2 Tbsp. chopped pimentos
- 2 Tbsp. baking powder
- 2 Tbsp. bacon drippings or oil
Directions

1Beat eggs; set aside.

2Mix all dry ingredients together.

3Then add creamed corn, beaten eggs, the buttermilk and then chopped ingredients.

4Stir all together.

5Fold in cheese.

6Bake in a greased and floured sheet pan or in muffin tins at 400° for about 30 minutes.
