  • 1 c. flour
  • 1 c. cornmeal
  • 1 can creamed corn
  • 1 c. buttermilk
  • 1/4 tsp. baking soda
  • 1 tsp. salt
  • 2 chopped green onions
  • 2 chopped jalapeno peppers
  • 1 c. grated Cheddar cheese
  • 2 eggs, beaten
  • 1 Tbsp. sugar
  • 2 Tbsp. chopped bell peppers
  • 2 Tbsp. chopped pimentos
  • 2 Tbsp. baking powder
  • 2 Tbsp. bacon drippings or oil

    Beat eggs; set aside.

    Mix all dry ingredients together.

    Then add creamed corn, beaten eggs, the buttermilk and then chopped ingredients.

    Stir all together.

    Fold in cheese.

    Bake in a greased and floured sheet pan or in muffin tins at 400° for about 30 minutes.
