Mexican Cornbread

  • 1 c. cornmeal plus 2 Tbsp.
  • 1/2 tsp. salt
  • 3/4 tsp. soda
  • 1/2 c. cream-style corn
  • 7/8 c. buttermilk
  • 2 eggs (1 large egg okay)
  • 4 oz. grated cheese
  • 1 medium onion, chopped
  • 2 1/2 Tbsp. seeded, chopped jalapeno peppers from jar
  • 3 Tbsp. bacon drippings

Directions

    Mix cornmeal and salt.

    Add soda to buttermilk and combine with cornmeal.

    Add eggs and mix thoroughly.

    Heat bacon grease in 9-inch iron skillet or 8-inch square pan.

    Pour half of batter into pan, sprinkle half of cheese over it, then pour in rest of batter.

    Top with rest of cheese.

    Bake at about 400° for about 35 minutes.
