Ingredients
- 1 c. cornmeal plus 2 Tbsp.
- 1/2 tsp. salt
- 3/4 tsp. soda
- 1/2 c. cream-style corn
- 7/8 c. buttermilk
- 2 eggs (1 large egg okay)
- 4 oz. grated cheese
- 1 medium onion, chopped
- 2 1/2 Tbsp. seeded, chopped jalapeno peppers from jar
- 3 Tbsp. bacon drippings
Directions

1Mix cornmeal and salt.

2Add soda to buttermilk and combine with cornmeal.

3Add eggs and mix thoroughly.

4Heat bacon grease in 9-inch iron skillet or 8-inch square pan.

5Pour half of batter into pan, sprinkle half of cheese over it, then pour in rest of batter.

6Top with rest of cheese.

7Bake at about 400° for about 35 minutes.
