  • 1 1/2 c. self-rising cornmeal
  • 3 eggs, beaten
  • 1 can cream-style corn
  • 3/4 c. cooking oil
  • 1 c. buttermilk
  • 3 to 5 jalapeno peppers
  • 1/2 bell pimento for color (optional)
  • 1 c. grated cheese

Directions

    Mix all ingredients, except cheese, thoroughly.

    Pour half of mixture into 9 x 13-inch baking pan.

    Spread cheese evenly over it.

    Pour the remainder of mixture over the cheese and bake in preheated oven at 375° for forty-five minutes or until it pulls away from side of pan.
