- 1 1/2 c. self-rising cornmeal
- 3 eggs, beaten
- 1 can cream-style corn
- 3/4 c. cooking oil
- 1 c. buttermilk
- 3 to 5 jalapeno peppers
- 1/2 bell pimento for color (optional)
- 1 c. grated cheese
Directions

1Mix all ingredients, except cheese, thoroughly.

2Pour half of mixture into 9 x 13-inch baking pan.

3Spread cheese evenly over it.

4Pour the remainder of mixture over the cheese and bake in preheated oven at 375° for forty-five minutes or until it pulls away from side of pan.
