- 1 1/2 c. cornmeal
- 2 eggs, well beaten
- 2 tsp. baking powder
- 1 tsp. salt
- 2/3 c. cooking oil
- 1 large onion, chopped
- 2 jalapeno peppers, chopped
- 1 c. cream-style corn
- 1 (8 oz.) carton sour cream
- 1 1/2 c. sharp Cheddar cheese, grated
Directions

1Mix all ingredients except grated cheese.

2Grease pan or skillet.

3Pour half the mixture into skillet and sprinkle on cheese. Do not stir.

4Cover with remaining mixture. Bake at 350° for 40 to 45 minutes.
