Mexican Cornbread

Ingredients

  • 1 box Jiffy mix cornbread
  • 1 c. cornmeal mix
  • 1 to 1 1/2 c. milk or buttermilk
  • 2 eggs
  • 3 tsp. bacon drippings
  • 1 small can chopped green chilies
  • 1 can cream-style corn
  • 1 lb. hamburger meat

Directions

    Brown hamburger meat in a skillet until done and drain fat. Season with salt, pepper and chili powder.

    Can use part of a package of taco seasoning.

    Add some chopped onion and bell pepper.

    Add chunked pieces of Velveeta cheese to top of meat.

    Pour cornbread mixture (all the ingredients except meat) on top of the meat and cheese.

    Bake at 400° for about 45 minutes. Remove from oven and top with grated cheese.
