  • 2 eggs or Egg Beaters
  • 1 c. corn, drained
  • 1/4 c. oil
  • 1 1/4 c. milk
  • 1/2 c. onion
  • 2 or 3 jalapeno peppers
  • 1/2 c. (or more) grated Cheddar cheese
