  • 2 eggs
  • 1 (16 oz) can creamed corn
  • 2 1/2 c sweet milk or buttermilk
  • 1/2 c salad oil or bacon drippings
  • 1 onion, chopped
  • 1 (4 oz) can chopped green chilies
  • 2 cups corn meal
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 1/2 c grated sharp Cheddar cheese

Directions

    Mix eggs, corn, milk, oil, onion and green chilies.

    Mix together corn meal, soda and salt; combine with liquid mixture. Add cheese.

    Preheat oven to 375°, put well greased pans in oven to preheat and pour batter into warmed pan.

    Bake at 375° for 45 - 60 minutes.

    Cut into squares and serve.
