  • 3 c. cornmeal (Jiffy mix)
  • 1 tsp. salt
  • 2 Tbsp. sugar
  • 2 1/2 c. sweet milk
  • 1/2 c. salad oil
  • 3 eggs
  • 1 c. corn (cream-style)
  • 1/2 c. jalapeno peppers
  • 1 1/2 c. cheese (yellow)
  • 1/4 lb. bacon, fried crisp
  • 1 large onion, chopped
  • 1/4 c. pimientos
  • 3 cloves garlic (optional)

Directions

    Mix together cornmeal mix, salt, sugar, milk and salad oil. Add eggs and mix well.

    Add corn, chopped jalapeno peppers, grated cheese and bacon (fried crisp and crumbled).

    Last, add onion, chopped fine, mashed pimientos and garlic.

    Bake in greased 3 x 8 x 8-inch pan at 450° for 35 minutes.
