  • 1 1/2 c. self-rising corn meal
  • 1 1/2 Tbsp. sugar
  • 1 medium onion, chopped fine
  • 1 pod jalapeno pepper
  • 1/2 c. grated Cheddar cheese
  • 1/2 c. oil
  • 1 1/4 c. milk
  • 2 eggs
  • 1 (8 oz.) can creamed corn

Directions

    Mix the first 5 ingredients together, then mix in order the oil, milk, eggs and corn.

    Mix all together.

    Cook in Pyrex 9 x 9-inch dish in a 450° oven until lightly browned on top.
