- 1 lb. ground beef
- 2 jalapeno peppers
- 1 c. yellow cornmeal
- 3/4 tsp. salt
- 1/2 tsp. baking soda
- 1 c. milk
- 1 can cream-style corn
- 2 eggs
- 1 Tbsp. bacon drippings
- 1/2 lb. grated Cheddar cheese
Directions

1Place beef and peppers in a skillet and cook until beef is brown.

2In a bowl, mix together (with a spoon) cornmeal, salt, soda, milk, corn, eggs and bacon drippings.

3Grease a large cast-iron skillet and heat until hot.

4Pour in 1/2 of the cornmeal batter.

5Cover with beef.

6Sprinkle cheese over beef.

7Pour on remaining batter.

8Bake at 350° for 1 hour.
