Ingredients

  • 1 tsp. sugar
  • 1 c. cornmeal
  • 2 eggs, beaten
  • 1 c. milk
  • 1/2 tsp. baking soda
  • 3/4 tsp. salt
  • 1 can creamed corn
  • 1 can Ro-Tel
  • 1/2 c. bacon grease
  • 1 large onion, chopped
  • 1 pkg. grated cheese
  • 2 Tbsp. corn meal
  • 1 lb. ground beef

Directions

    Brown meat; drain and add Ro-Tel.

    Mix sugar, cornmeal, eggs, milk, baking soda, salt, corn and bacon grease in large bowl.

    In iron skillet, brown 2 tablespoons cornmeal.

    Pour 1/2 of mix into skillet.

    Then layer meat, onion and cheese.

    Pour remaining mix on top.

    Bake at 350° for 45 to 50 minutes.
