  • 1 c. self-rising cornmeal
  • 2 eggs
  • 2/3 c. buttermilk
  • 1/3 c. oil
  • 1 c. cream-style corn
  • 2 c. grated Cheddar cheese
  • 1 small can chopped chilies

Directions

    Mix cornmeal, eggs, buttermilk, oil and cream-style corn. Pour half of batter into hot greased skillet and sprinkle 2 cups grated Cheddar cheese and 1 small can chopped chilies over mixture; cover with remaining batter. Bake at 375° for 30 to 40 minutes.
