  • salt to taste
  • 1 large onion, chopped
  • 1 c. self-rising cornmeal mix
  • 1 c. buttermilk or whole milk
  • 1/2 c. oil
  • 2 eggs
  • 1 can cream-style corn
  • 8 oz. shredded mild Cheddar cheese
  • chopped jalapenos
