  • 1 1/2 c. yellow corn meal
  • 3 tsp. baking powder
  • 1 tsp. salt
  • 1 tsp. sugar
  • 3 eggs
  • 1 c. buttermilk
  • 2/3 c. oil
  • 1/2 c. green chilies
  • 1 to 2 chopped jalapeno peppers (optional)
  • 1 c. creamed corn
  • 1 c. grated cheese

Directions

    Mix all ingredients, except cheese.

    Pour 1/2 batter into greased pan.

    Sprinkle with cheese and pour remaining batter in pan.

    Bake at 450° for 25 to 30 minutes.
