- 2 eggs
- 1 Tbsp. sugar
- 1/4 tsp. garlic powder
- 1 c. chopped onion
- 2 Tbsp. jalapeno pepper
- 4 Tbsp. bacon drippings
- 1 1/4 c. milk
- 2 c. self-rising cornmeal
- 1 c. creamed corn
- 3/4 c. shredded Cheddar
- 2 Tbsp. chopped pimento
Directions

1Cook bacon. Beat eggs. Stir in milk and bacon drippings. Add bacon and remaining ingredients and mix well. Pour batter into hot (cast-iron) skillet. (Makes 2 pans.) Bake for 35 minutes or until golden brown at 400°. Great with chili.
