Ingredients
- 1 c. yellow cornmeal
- 2 eggs, well beaten
- 1 c. sweet milk
- 1/2 tsp. soda
- 3/4 tsp. salt
- 1 (No. 3) can cream-style corn
- 1/2 c. bacon drippings or vegetable oil
- 1/2 lb. ground beef
- 1 large onion, finely chopped
- 1/2 lb. sharp Cheddar cheese, grated
- 4 jalapeno peppers (canned peppers), chopped
Directions

1Mix first 7 ingredients and set aside.

2Saute 1/2 pound ground beef.

3Drain on an absorbent paper towel.

4The next 3 ingredients are prepared and placed in separate mounds, ready to be used. Grease a large iron skillet.

5Heat.

6Sprinkle a very thin layer of meal in skillet and brown slightly.

7Pour 1/2 batter in skillet. Sprinkle cheese, then meat, peppers and onion evenly over batter. Pour remaining batter on top.

8Bake in 350° oven for 45 to 50 minutes.
