- 1/2 c. flour
- 3 eggs
- 1 jalapeno pepper, chopped fine
- 1 large grated onion
- 1/2 c. Wesson oil
- 2 1/2 c. grated cheese (Cheddar)
- 1 can Mexicorn
- 1/4 c. sugar
Directions

1Mix all ingredients together until of semi-smooth consistency. Pour into a greased cast-iron skillet.

2Bake at 375° about 25 to 30 minutes.

3Top should be golden brown and edges slightly darker.
