  • 1 c. butter
  • 1 c. sugar
  • 4 eggs
  • 1 c. flour
  • 4 tsp. baking powder
  • 1/4 tsp. salt
  • 16 oz. creamed corn
  • 1/4 c. fresh red peppers
  • 4 oz. green chillies
  • 1/2 c. shredded Jack
  • 1/2 c. Cheddar cheese
  • 1 c. yellow corn meal
  • 1/2 c. (5) jalapeno

    Preheat oven to 350°.

    Cream butter and sugar.

    Add eggs. Beat well.

    Blend in corn, peppers, chillies and cheeses.

    Sift flour, baking powder, salt and corn meal; blend into mixture. Stir in jalapeno.

    Pour into greased 9 x 13-inch or 8 x 10-inch pan.

    Lower heat to 300°.
