- 1 qt. fresh whole milk
- whey (leftover from 10 qt. milk)
- 1/2 c. vinegar
Directions

1Strain and cool the fresh goat milk to 50° or less.

2Pour into clean glass canning jars up to within 1-inch of the tops.

3Put the lids and bands on and screw them down tightly.

4Place jars in a large kettle that is partly filled with water. Cover and bring the water to a boil.

5Let it boil for 1 hour, being careful that it doesn't boil down too far. Cool and store in a dark place.
