  • 1 1/2 c. yellow cornmeal
  • 1 can cream-style corn
  • 2 eggs, beaten
  • 3 chopped jalapeno peppers (optional) or jalapeno cheese
  • 1 1/4 tsp. salt
  • 3 tsp. baking powder
  • 2/3 c. oil
  • 1 c. buttermilk or sour cream
  • 2 c. grated sharp Cheddar cheese

    Combine cornmeal, salt and baking powder.

    Mix well.

    Add milk and eggs.

    Mix.

    Add remaining ingredients, except cheese.

    Pour 1/2 of mixture in well-greased cast-iron skillet.

    Spread cheese on top.

    Add rest of mix over that.

    Bake in a 400° oven for 45 minutes.
