- 1 1/2 c. yellow cornmeal
- 1 can cream-style corn
- 2 eggs, beaten
- 3 chopped jalapeno peppers (optional) or jalapeno cheese
- 1 1/4 tsp. salt
- 3 tsp. baking powder
- 2/3 c. oil
- 1 c. buttermilk or sour cream
- 2 c. grated sharp Cheddar cheese
Directions

1Combine cornmeal, salt and baking powder.

2Mix well.

3Add milk and eggs.

4Mix.

5Add remaining ingredients, except cheese.

6Pour 1/2 of mixture in well-greased cast-iron skillet.

7Spread cheese on top.

8Add rest of mix over that.

9Bake in a 400° oven for 45 minutes.
