  • 1/2 c. green pepper
  • 1 large onion, chopped
  • 2 large canned jalapeno peppers, chopped
  • 1 c. Cheddar cheese
  • 3 eggs
  • 1/2 c. oil
  • 1/2 c. flour
  • 1/2 c. yellow cornmeal
  • 1/2 tsp. baking soda
  • 3 tsp. baking powder
  • 1 tsp. salt
  • 1 c. buttermilk
  • 1 can Mexican style corn

    Chop green pepper, onion and jalapenos; set aside.

    Put eggs and oil in bowl; beat well.

    Add dry ingredients.

    Stir in buttermilk.

    Add Mexican corn; fold in chopped vegetables and Cheddar cheese.

    Pour into 13 x 9 x 2-inch greased pan.

    Bake at 350° to 400° until firm in center (25 to 30 minutes).
