- 1/2 c. green pepper
- 1 large onion, chopped
- 2 large canned jalapeno peppers, chopped
- 1 c. Cheddar cheese
- 3 eggs
- 1/2 c. oil
- 1/2 c. flour
- 1/2 c. yellow cornmeal
- 1/2 tsp. baking soda
- 3 tsp. baking powder
- 1 tsp. salt
- 1 c. buttermilk
- 1 can Mexican style corn
Directions

1Chop green pepper, onion and jalapenos; set aside.

2Put eggs and oil in bowl; beat well.

3Add dry ingredients.

4Stir in buttermilk.

5Add Mexican corn; fold in chopped vegetables and Cheddar cheese.

6Pour into 13 x 9 x 2-inch greased pan.

7Bake at 350° to 400° until firm in center (25 to 30 minutes).
