Mexican Cornbread

  • 3 tsp. oil
  • 1 c. self-rising cornmeal
  • 1/2 tsp. soda
  • 3/4 c. buttermilk
  • 1 beaten egg
  • 2 tsp. minced onion flakes
  • 1 c. creamed corn
  • 3 or more chopped chili peppers (optional)
  • 1 c. sharp grated cheese
  • 1/4 c. salsa (optional to use just before bread is done)

Directions

    Preheat oven to 400°.

    Put 3 teaspoons oil into the skillet to heat while preparing.

    Mix meat, soda and onion.

    Add egg, milk and corn; stir well.

    Add peppers and cheese.

    Bake for 15 minutes.

    The last 5 minutes, spoon salsa around edge of bread. Continue baking until done.

    May be served with barbecue.
