- 3 tsp. oil
- 1 c. self-rising cornmeal
- 1/2 tsp. soda
- 3/4 c. buttermilk
- 1 beaten egg
- 2 tsp. minced onion flakes
- 1 c. creamed corn
- 3 or more chopped chili peppers (optional)
- 1 c. sharp grated cheese
- 1/4 c. salsa (optional to use just before bread is done)
Directions

1Preheat oven to 400°.

2Put 3 teaspoons oil into the skillet to heat while preparing.

3Mix meat, soda and onion.

4Add egg, milk and corn; stir well.

5Add peppers and cheese.

6Bake for 15 minutes.

7The last 5 minutes, spoon salsa around edge of bread. Continue baking until done.

8May be served with barbecue.

9Makes 6 servings.
