- 1 large onion, chopped
- 1 lb ground beef
- 1 jalapeno pepper, chopped
- 1 cup yellow cornmeal
- 12 teaspoon baking soda
- 1 teaspoon salt
- 12 cup vegetable oil
- 1 cup milk
- 2 eggs, beaten
- 1 (11 ounce) can whole kernel corn, drained
- 1 lb cheddar cheese, shredded
Directions

1Grease a large black iron skillet and place in a 350 degree oven for at least 15 minutes.

2Saute onion with ground beef and jalapeno pepper.

3Set aside.

4In a large bowl, mix corn meal, baking soda, salt, oil, milk, eggs, and corn.

5Pour half of corn meal mixture into heated skillet.

6Layer beef mixture and cheddar cheese.

7Then pour remaining corn meal mixture on top.

8Bake 45 minutes at 350 degrees.
