- 1 lb. ground beef
- 1/4 c. onion, chopped
- 2 Tbsp. jalapeno pepper, chopped
- 2 eggs, beaten
- 2 c. cream style corn
- 2/3 c. milk
- 1 6.5 oz. pkg. cornbread mix
- 4 slices American cheese
Directions

1Preheat oven to 425 degrees.

2Brown ground meat, drain.

3Add onion and pepper, set aside.

4Combine eggs, 1 cup corn and milk with cornbread mix.

5Stir just till dry ingredients are moistened. Pour 1/2 of batter into greased 9 inch square pan.

6Top with beef mixture, cheese slices and remaining cup of corn.

7Pour remaining 1/2 of batter on top and bake 25 to 30 minutes.
