- 1 lb. ground beef
- 1/4 + c. onion
- 2 Tbsp. chopped jalapeno peppers or can use bell pepper
- 2 eggs, beaten
- 2 c. cream-style corn
- 2/3 c. milk
- 1 (8 1/2 oz.) box Jiffy cornbread mix
- 4 slices American cheese
Directions

1Preheat oven to 425°.

2Brown meat with onion and peppers.

3Set aside.

4Combine eggs, 1 cup corn and milk with cornbread mix. Stir until dry ingredients are moistened.

5Pour 1/2 of the batter into greased 9-inch square pan.

6Top with beef mixture, cheese slices and remaining 1 cup corn.

7Pour remaining half of batter on top and bake 25 to 30 minutes.
