- 1 c. yellow cornmeal
- 1/2 tsp. salt
- 1 to 3 jalapeno peppers
- 1 small can cream-style corn
- 2 large onions, chopped
- 3 cloves garlic, chopped
- 1/2 tsp. soda
- 3/4 lb. Cheddar cheese, grated
- 1 green bell pepper
- 1 small jar pimento
Directions

1Combine milk and eggs; add meal, salt, peppers, corn, onion, garlic and soda.

2Pour 1/2 of mixture into greased, hot cast-iron skillet.

3Add some cheese.

4Add remaining batter.

5Top with cheese.

6Garnish with green pepper and pimento.

7Bake at 350° for 45 minutes.
