Mexican Cornbread With Beef

Ingredients

  • 1 lb. hamburger
  • 1 c. cornmeal
  • 1/2 tsp. soda
  • 2 eggs
  • 3/4 tsp. salt
  • 1 c. milk
  • 1/2 c. bacon drippings or oil
  • 1 medium size can cream-style corn
  • 1 large onion, chopped
  • 1/2 to 1 lb. Ortega chilies (can use jalapeno peppers to taste)

    Brown hamburger and set aside.

    Mix next 7 ingredients to make batter.

    In a greased pan, pour 1/2 of batter; then layer hamburger, onion, chilies and grated cheese.

    Pour remainder of batter on top.

    Bake at 350° to 400° for 30 to 45 minutes.

    I usually use a 7 x 11-inch or 9 x 13-inch pan.
