  • 1 c. yellow cornmeal
  • 1/3 c. flour
  • 2 Tbsp. sugar
  • 1 tsp. salt
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 2 eggs, beaten
  • 1 c. buttermilk
  • 1/2 c. vegetable oil
  • 1 (8 3/4 oz.) can cream-style corn
  • 1/3 c. chopped onions
  • 2 Tbsp. chopped green pepper
  • 1/2 c. shredded Cheddar cheese
  • 1 1/2 lb. ground beef, browned

    In a mixing bowl, combine first 6 ingredients. Combine remaining ingredients and add to dry ingredients and stir only until moistened.
