- 1 zucchini
- 1 yellow squash
- 1 onion
- 1 tomato
- 1/2 stick butter or margarine
- 1 lb. grouper, mahi mahi, red snapper, sword or any type fish steak that is not flaky
- 1/2 small jar Mexican salsa
Directions

1Cut vegetables into bite-sized pieces.

2Place fish, skin side down on a large sheet of tin foil.

3Put butter pats on top.

4Add salsa and vegetables.

5Create a tent with the foil to completely cover the fish and vegetables, leaving room to steam.

6Bake at 350° for 30 to 40 minutes until fish is done.

7Serve with or over rice.
