  • 1 zucchini
  • 1 yellow squash
  • 1 onion
  • 1 tomato
  • 1/2 stick butter or margarine
  • 1 lb. grouper, mahi mahi, red snapper, sword or any type fish steak that is not flaky
  • 1/2 small jar Mexican salsa

Directions

    Cut vegetables into bite-sized pieces.

    Place fish, skin side down on a large sheet of tin foil.

    Put butter pats on top.
  4. 4
    Add salsa and vegetables.

    Create a tent with the foil to completely cover the fish and vegetables, leaving room to steam.

    Bake at 350° for 30 to 40 minutes until fish is done.

    Serve with or over rice.
