- 3 Tbsp. oil
- 1 c. long grain rice
- 2 c. water
- 1 c. chili salsa
- 1/2 c. chopped green pepper
- 1 small onion, chopped
- 1 clove garlic, minced
Directions

1In a 12-inch skillet, heat oil and add rice.

2Cook until golden brown, stirring often.

3Stir in remaining ingredients. Bring mixture to boil.

4Reduce heat.

5Cover and simmer 15 to 20 minutes, or until rice is tender.

6Season to taste.

7Serve with additional salsa, if desired.
