Mexican Lasagna

Ingredients

  • 1 1/2 lb. ground beef, browned
  • 1 pkg. taco seasoning
  • 1 tsp. Lawry's seasoned salt
  • 1 c. diced tomatoes (fresh or canned)
  • 2 (8 oz.) cans tomato sauce
  • 1 can diced green chili
  • 1 c. cottage or Ricotta cheese
  • 2 beaten eggs
  • 12 corn tortillas
  • 2 1/2 c. grated Monterey Jack cheese

    Add first 6 ingredients and simmer 10 minutes.

    Mix remaining ingredients, except Monterey Jack cheese and tortillas, together. Layer 1/2 meat mixture and top with 1/2 shells.

    Spread cheese mixture.

    Add 1/2 Monterey Jack cheese.

    Repeat layers.

    Bake uncovered 20 to 30 minutes at 350° in 9 x 13-inch pan.
