  • 1 lb. lean ground beef
  • 1/2 c. each: chopped onion and green pepper
  • 1 (2 1/4 oz.) can sliced pitted ripe olives
  • 1 (24 oz.) jar salsa (2 1/2 c.)
  • 1 (8 3/4 oz.) can whole kernel corn, drained
  • 1 tsp. each: chili powder and ground cumin
  • 10 corn tortillas (6-inch), divided
  • 3 c. (24 oz.) small curd cottage cheese
  • 1 c. (4 oz.) natural shredded sharp Cheddar cheese

Directions

    Brown meat, onion and green pepper in large skillet on medium heat; drain.

    Add salsa, corn and seasonings.

    Layer 1/3 of meat sauce, 1/2 of the tortillas and 1/2 of cottage cheese in 13 x 9-inch baking dish.

    Repeat layers, ending with meat sauce.
