Ingredients

  • 1 1/2 lb. ground beef, browned and drained
  • 1 T. chili pepper
  • 1/4 T. red pepper
  • 1 can diced Mexican-style tomatoes
  • 2 c. small curd cottage cheese
  • 1 egg
  • 1 1/2 t. ground cumin
  • 1/4 t. garlic powder
  • 1 t. salt
  • 10-12 tortillas
  • 1 c. mexican cheese

Directions

    Put together beef, spices, and tomatoes.

    Heat through. Cover bottom and sides with tortillas in 9x13 pan.

    Spread meat inside; top with tortillas. Mix cottage cheese, mexican cheese, and egg.

    Pour over tortillas.

    Bake at 350° for 30 minutes. Remove from oven.

    Serve with salsa, sour cream, lettuce, tomatoes and onions.
