Mexican Lasagna

Ingredients

  • 1 1/2 lb. ground beef
  • 1 large onion, chopped
  • garlic to taste
  • oregano to taste
  • 1/2 (12 oz.) jar salsa (medium or hot, to your taste)
  • 1 small can tomato paste
  • 1 1/2 cans Mexican corn (with peppers)
  • 1 large container cottage cheese
  • 2 eggs
  • salt to taste
  • pepper to taste
  • 1 pkg. large flour tortillas
  • 1 lb. shredded Cheddar cheese

Directions

    Brown beef, onions, garlic and oregano in large pot; drain. Add salsa, tomato paste and can of water.

    Simmer 20 minutes. Drain corn and add to mixture.

    Cover and simmer 10 to 15 minutes. Turn mixture off and let stand.

    Mix (with fork) cottage cheese, eggs, salt and pepper in a bowl.
