  • 1 1/2 lb. ground beef
  • 1 pkg. Lawry's taco seasoning
  • 8 oz. Ricotta cheese
  • 2 eggs
  • 1 c. diced tomatoes or whole stewed tomatoes
  • 2 (8 oz.) cans tomato sauce
  • 9 corn tortilla shells
  • 12 oz. Monterey Jack cheese, grated
  • 1 can green chilies, chopped

Directions

    Brown meat and drain.

    Add taco seasoning, tomatoes, tomato sauce and green chilies.

    Mix Ricotta cheese and eggs together. Layer in following order:

    meat, Ricotta cheese, tortillas and cheese.

    Make 2 layers and finish with the cheese on top.

    Bake at 350° for 1 hour or until warm throughout.
