- 16 oz. ground turkey
- 1/2 c. chopped onions
- 1/2 c. chopped green peppers
- 2 c. canned tomatoes, chopped
- 1 envelope taco seasoning mix
- 2 c. (16 oz.) cottage cheese
- 6 oz. shredded Cheddar cheese
- 2 eggs
- 6 (6-inch) flour or corn tortillas
- 1 c. chopped fresh tomatoes
- 2 c. lettuce, shredded
Directions

1In large skillet brown turkey with onion and pepper.

2Add tomatoes and taco seasoning.

3Simmer, uncovered, 5 minutes.

4In bowl, combine cottage cheese, 4 ounces Cheddar cheese and eggs. Place 3 tortillas on bottom of a sprayed 9 x 13-inch or 8 x 12-inch baking dish.

5Spoon meat mixture evenly over tortillas.

6Top with 3 tortillas then cheese mixture.

7Bake, covered, at 350° for 40 minutes.

8Sprinkle remaining cheese over top of lasagna and continue baking, uncovered, for 5 minutes or until cheese melts. Garnish with tomatoes and lettuce.

9May add taco sauce or sour cream, if desired.
