- 1 1/2 lb. ground beef
- 1 1/2 tsp. ground cumin
- 1 Tbsp. chili powder
- 1/4 tsp. garlic powder
- 1/4 tsp. red pepper
- 1 tsp. salt
- 1 tsp. pepper
- 1 lb. can tomatoes, chopped
- 2 c. cottage cheese (small curd)
- 1 c. Monterey Jack cheese, grated
- 1 egg
- 1 pkg. tortillas (corn)
Directions

1Brown beef and drain thoroughly.

2Add remaining ingredients and heat.

3Line bottom and sides of a 13 x 9-inch pan with corn tortillas.

4Cover with beef mixture and place another layer of tortillas on top.

5Mix together cottage cheese, Monterey Jack cheese and egg; pour over tortillas.

6Bake at 350° for 30 minutes. Serve with grated cheese, black olives, green onions, tomatoes and lettuce.
