Mexican Lasagne

  • 1 1/2 lb. ground beef or turkey
  • 1/4 tsp. seasoned salt
  • 1 pkg. taco seasoning
  • 1 c. diced canned tomatoes
  • 2 (8 oz.) cans tomato sauce
  • 1 (4 oz.) can whole green chilies, chopped
  • 8 oz. Ricotta cheese
  • 2 eggs
  • 12 to 15 corn tortillas (flour can be substituted)
  • 10 oz. Monterey Jack cheese, shredded

    Brown and drain meat.

    Cook meat, seasoned salt, taco seasoning, tomatoes, tomato sauce and chilies.

    Cook for 10 minutes.

    Mix Ricotta cheese, Monterey jack cheese and eggs; set aside.

    Layer in a 9 x 13-inch pan as follows: 1/3 meat, tortillas (one layer, cut to fit) and 1/3 Ricotta mixture.

    Bake at 350° for 20 minutes or until hot.
