Mexican Quiche

  • 1/2 c. melted butter
  • 10 eggs
  • 1/2 c. flour
  • 1 tsp. baking powder
  • 1 tsp. salt
  • pepper to taste
  • 1 (8 oz.) can chopped chilies (not hot)
  • 1 pt. small curd cottage cheese
  • 1 lb. Monterey Jack cheese, coarsely grated

Directions

    Beat eggs lightly in a large bowl.

    Add flour, baking powder, salt and pepper; blend.

    Add cooled, melted butter, chilies and cheese and mix just to blended.

    Turn into a buttered 9 x 13-inch pan (at this point, you may refrigerate until ready to bake). Bake at 400° for 15 minutes, then at 350° for 40 minutes.

    Check with knife for doneness.

    When removed from oven, let stand for a few minutes.

    Cut into squares for serving. Serve warm.
