Ingredients
- 1/2 lb. turkey sausage
- 8 eggs
- 6 oz. green chilies, chopped
- 4 oz. Cheddar cheese
- 6 to 8 flour tortillas
- 1 c. red bell pepper, chopped
- 1 c. purple onion, chopped
- 3 Tbsp. cilantro, chopped
- 1 tsp. cumin
- 2 tsp. chili powder
Directions

1Line quiche pan with tortillas, overlapping on bottom and turning up to cover sides.

2Bake at 350° for 10 minutes.

3Remove the crust from the oven and sprinkle 2 ounces cheese over crust. Meanwhile, spray skillet with Pam and saute onion and red pepper. Add turkey sausage and cook until done.

4Add spices and chilies. Mix well.

5Remove from heat and add eggs.

6Pour sausage mixture into crust.

7Sprinkle remaining 2 ounces of cheese on top.

8Bake 30 to 35 minutes.

9Quiche can be frozen after it is cooked.

10To reheat, thaw and heat at 350° until heated through, about 20 minutes.
