  • 1 c. rice
  • 2 Tbsp. cooking oil
  • 1 sm. onion, chopped
  • 1 garlic clove, minced
  • 1 Tbsp. chopped parsley
  • 1 jalapeno chili, minced
  • 2-1/2 c. chicken broth, boiling
  • 1 tsp. salt

Directions

    Fry rice in hot oil with chopped onion and garlic until lightly browned.

    Drain off oil.

    Add boiling broth, parsley, chili and salt.

    Cover tightly and simmer for 25 minutes without lifting the lid.

    Serve with main dish.
