- 1 c. rice
- 2 Tbsp. cooking oil
- 1 sm. onion, chopped
- 1 garlic clove, minced
- 1 Tbsp. chopped parsley
- 1 jalapeno chili, minced
- 2-1/2 c. chicken broth, boiling
- 1 tsp. salt
Directions

1Fry rice in hot oil with chopped onion and garlic until lightly browned.

2Drain off oil.

3Add boiling broth, parsley, chili and salt.

4Cover tightly and simmer for 25 minutes without lifting the lid.

5Serve with main dish.
